The basis for the balanced Novellum Chardonnay from the Languedoc are grapes from the Chardonnay grape variety. After harvesting, the grapes are immediately sent to the winery. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Novellum Chardonnay is allowed to further harmonize on the fine lees for a few months.
