The Pouilly-Fuissé "Sur" la Roche is a dry white wine produced by Domaine Saumaize-Michelin in Vergisson, in the Mâconnais, Burgundy. The Chardonnay grapes come from a 1.65-hectare vineyard located on the back side of the Roche de Vergisson, in a sunny and early maturing area, considered one of the most prestigious in the commune. The soil and microclimate of this site give the wine a unique character, enhanced by biodynamic and sustainable viticulture, free of chemicals and mechanical processes.
The winemaking process involves 100% fermentation in French oak barrels, 15% of which are new, with complete malolactic fermentation. The wine is aged for 12 months on fine lees, with bâtonnage every ten days for nine months. The wine is finally bottled without filtration, following the lunar calendar, to best preserve the aromatic integrity.
The nose reveals sunny aromas of ripe fruit, enriched by an intense and layered minerality. On the palate, the wine expresses with breadth, consistency, and a lively freshness, highlighting the energy and balance of the terroir. The persistence and structure also indicate a notable evolutionary potential.
